Chicken Piccata

3 lbs. chicken breasts
1 Cup wine
8 Tbl. butter
8 Tbl. olive oil
4 tbl lemon juice
3 Tbls. flour
Parsley
Cheese
1/2 Capers

Preheat the oven to 350 degrees
Butterfly chicken breasts so that they are thin
Lightly saute breasts in Butter and olive oil
Remove the chicken and set aside
Add wine and lemon juice to pan and deglaze
Whisk in until smooth 1/4 cup butter melted and 3 Tbs. Flour
Stir in the capers
Place chicken breasts in oven-proof baking dish
Pour sauce over breasts
Top with thinly sliced lemons, fresh parsley
Bake at 350 for 20 minutes or until the breasts reach an internal temperature of 160
