Broccoli Cheddar Soup

Broccoli Cheddar Soup

 (easily halved)


6-8 Cups Broccoli flowerettes, cut small
1 Onion chopped finely
6 cloves of Garlic crafted?/
8 Tblsp butter
1/2 cup flour
1 Carrot copped, shredded, or diced finely
4 Cups Chicken Stock
1/2 Cup Chardonnay
4 Cups heavy whipping cream
4 Cups chredded cheddar cheese

Saute garlic and onion in butter until golden
- Whisk in flour to make a roux
- Add Chicken stock, wine, broccoli, and carrots
- Bring to a boil
- Lower to simmer and continue to simmer until carrots and broccoli are tender (15-25 minutes)
- Add cream and cheese
- Simmer, stirring until the cheese is melted
- Season to taste
- Serve with croutons, crusty bread, and bacon
