Vanilla Cake
Just A Vanilla Cake
3 sticks of butter, softened (1 1/2 cups)
3 cups sugar
3 cups cake flour
5 eggs
1 cup milk
3 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon almond extract
Preheat oven to 350 degrees.
- Prepare three 8 or 9 inch round cake pans. I use Wilton Cake Release. You can grease and flour the pans or cut out waxed paper to fit in the pans.
- Combine the flour, salt, and baking powder in a mixing bowl.
- Add the almond and vanilla flavoring to the milk in a measuring cup.
- Cream the butter and the sugar in a mixer.
- Add the eggs to the creamed butter mixture one at a time, blending after each addtion ( I usually count to 20). Scrape the bowl after each egg is added.
- Alternately add the flour mixture and the milk mixture. Mix after each addition until all of the flour and milk are combined with the creamed butter.
- Mix on a medium speed for one additional minute.
- Divide the batter between the 3 prepared cake pans.
Bake for 20 - 30 minutes depending on your oven.
Test with a thin cake tester wire. The wire will come out clean if the cake is done.
Do not overbake the cake.
Frost with vanilla frosting.
Vanilla Frosting
8 cups powdered sugar
1 cup butter (2 sticks)
2 tablespoons shortening
10 - 12 tablespoons milk
1 teaspoon vanilla extract
1 teaspoon almond extract
- Cream the butter and the shortening in a mixer.
- Add the powdered sugar.
- Add the milk and the flavorings. Mix on medium speed until you have a nice creamy consistency.
