Tart Cherry PIe
Tart Cherry Pie
6 cups pitted tart cherries, drain off some of the liquid
1 cup sugar
1/3 cup flour
1/2 tsp cinnamon
1 tsp almond extract
Mix the sugar, flour, and cinnamon in a bowl.
Place the cherries in a large mixing bowl.
Sprinkle the extract and the sugar mixture over the cherries.
Gently mix until the cherries are evenly coated.Pour the mixture into a prepared pastry shell. This is enough filling for a deep dish pie. It was almost overflowing in the 9 1/2 inch tart pan I used.
Sprinkle with a crumb topping.
Bake in a 425 degree oven for 20 minutes.
Lower the temperature to 350 degrees and continue baking for 40 - 45 minutes or until the crust is golden brown and the cherries are bubbling. Place pie guards on the edge for the last 30 minutes of baking so that the pastry does not over brown.
