Silver Dollar Potatoes

Silver Dollar Potatoes
5 Pounds of Russet Potatoes
1 Gallon Peanut Oil (or similar)
Deep Fryer - I use a Presto double basket model
Seasoning - I use coarsely ground sea salt

  • Scrub the potatoes well.
  • Slice the potatoes into 1/8 -1/4 thick pieces.
  • Place the potato slices in ice cold water for about 5 minutes. Then pat dry.
  • Pour the oil into the deep fryer and heat on high until sizzling.
  • Put the potatoes in the fryer basket. Do not overcrowd the basket.
  • Fry until the potatoes are golden brown- the thinner slices will be crispier and the thicker slices will be more tender.
  • Drain on paper towels.
Season and enjoy. I like them best with just sea salt.
