White Chocolate Chip Cookies with Dried Cherries
2 1/4 Cup Flour
1 Tsp Baking Soda
1 Tsp Baking Powder
1 Tsp Salt
3/4 Cup Sugar
3/4 Brown Sugar
1 Cup Shortening
3 Eggs
1/2 Tsp Vanilla Flavoring
1/2 Tsp Almond Flavoring
3/4 Cup Dried Cherries
3/4 Cup White Chocolate Chips
Combine the flour, baking soda, baking powder, and salt in a bowl and set aside.
Cream the sugars and shortening in a mixing bowl. Add the eggs, one at a time, blending after each addition.
Add the vanilla and almond flavorings. Blend until incorporated.
Slowly add the dry ingredient mixture to the sugar mixture. Once everything is nicely mixed, blend for 1 minute on medium speed.
Fold in the cherries and the chocolate chips. (You can add in 3/4 cup of macadamia nuts here if you love nutty cookies!)
Drop the cookie mixture in about 1 Tablespoon servings on the cookie sheet. Leave about 1 -2 inches between each cookie.
Bake for about 8 minutes. Cool on a rack.
