Peperonata
1 large red onion,
6 peppers, washed and thinly sliced
5 ripe large tomatoes
1/4 cup olive oil
a handful of fresh basil
Add the olive oil to a heavy pan and saute the onion until it is soft and transparent. I used a red onion but I might try white or yellow the next time.
Next, add the peppers and continue cooking them with the onions.
Chop the tomatoes into 1-2 inch pieces and add them to the onions and peppers. Cook for about 30 minutes until you have a nice stewish mixture. I did not cover this but I might next time.
